i always eat breakfast but never provide myself with enough time to make a full out breakfast feast. i mean for my everyday breakfast we're talking cereal, yogurt, granola or oatmeal. so, when getting together with a few friends the other night, i wasn't shy about the idea of having breakfast for dinner! i love breakfast food :)

case of the mondays

allergies = a swollen right eye.
yay for monday!

 please just have a last minute monday laugh with me when i tell you that yes, i have allergies and my eye is seriously swollen from it. every time i sneeze only my right eye has been effected with redness, swelling and excessive tears. i think that only the right side of my body has allergies because not only is this happening to my right eye but the only the right side of my nose is stuffy as well!

that thing called school

i started class this week. and let me just confirm with you that even after the first week i and definitely glad that im only taking one class at a time. working full time+some babysitting part time+grad classes=no life/very exhausting. my text book for my class:

if i were to be honest, i did purchase this book the day before classes started BUT i still have not received it. i even spent extra money for overnight shipping. not okay, amazon. my class work was 100x's harder without that thing.

okay, okay, im done blabbing about my class! this weekend is a busy one for me but since i haven't checked in for a few days i just wanted to say "hey" and still alive and well :) i hope everyone is having a wonderful weekend and getting some time to relax!!

recipe time!

totally on a whim i decided to google ingredients that i had in my kitchen to see what recipes may match.
just to let you know...i google everything. 
not kidding.
sometimes i find myself googling things that i already know the answer to.

this is what i ended up with. and it was super yummy so i need to share the recipe :)
sorry i didn't take any pictures myself...i just wasn't expecting to blog the recipe!

lemon chicken
for the chicken
-2 large chicken breast fillets cut into bite size chunks
-1 teaspoon soy sauce
-1 egg yolk
-1 1/2 tbs cornstarch
-2-3 tbs vegetable or canola oil
-4 thinly sliced scallions

for the sauce
-1 large lemon, zest and juice (1/4 cup)
-2 tbs sugar
-1/4 cup water
-1 teaspoon cornstarch
-salt and freshly ground black pepper

1. Put the chicken in a bowl and toss with the soy sauce. Leave to marinate for 30 minutes.

2. To make the sauce, whisk together the lemon zest and juice with the sugar, water and cornstarch in a small saucepan. Bring to a boil, whisking constantly until thickened, then keep warm.

3. Meanwhile, heat the oil in a large heavy-based saucepan. Whisk together the egg yolk and cornstarch in a small bowl to make a batter. Toss the chicken in the batter and fry for three to four minutes on each side until golden and cooked through.

4. Transfer to a plate and spoon the warm lemon sauce over the chicken. Scatter the scallions over the dish before serving.

I actually direguarded the last step...instead i mixed the chicken into the lemon sauce 
i had made some brown rice so i put the chicken on top of the rice.
as a side i just put together a salad
and kenny made some brussel sprouts
...yes brussel sprouts!
i never liked those little sprouts til i tried them the way kenny makes them- d-lish!

i am definitely a procrastinator. my class starts today...i have yet to buy my book. yiiikes.
 when i am already in bed, i am extremely lazy. don't judge me, my bed is super comfy!
and i'm pretty sure that this is what happens every morning-either too hot or too cold.

i have been pretty active all weekend but tonight i just wanted to share something out of the book that i have been reading, i read it a few days ago, but thought it was worth sharing.

i know, im not always the "inspirational" poster. im not really trying to be inspirational. the page i was reading in my book was talking about the new year and how new year resolutions usually bust quickly. the list was just some last advice the author wrote in closing.
when i read the list i immediately thought " that's starting the obvious".
annnnyway, like i said--im not going for inspiration..just wanted to share what i thought was good advice.

now its past my bedtime. (number 9, anyone??)

Kreativ Blogger Award

i have been awarded! well...this is officially my first blog

award and i was pretty surprised when i found out that i had received it! i was awarded the Kreativ Blogger Award by Dominika from A girl should be two things: classy and fabulous. thanks girl, that was really sweet to think of my blog!

1. name your favourite song: favorite song? yikes..i love music, so this is a tough one. i really listen to all types of music but i would have to say that one of my all time favorite songs is "make you feel my love" by adele. this song is one of her older that i actually knew and heard about before she became more recently popular.

2. name your favourite dessert: i will take a snickers bar for dessert any day! i know that's just candy but if i had a favorite dessert i would choose a cupcake. i looove cupcakes!

3. what ticks me off: the lack of driving skill in the town that i live in. also currently it ticks me off when i see girls working out at the gym with their hair down (not to offend anyone but if you are working out and comfortable leaving your hair down, your not working out hard enough! hah.) and when people work out with jeans on-how is that possible?

4. When I'm upset I: take a few minutes to cool down before acting upon it. think before i speak!! 

5. what's your favourite pet: i grew up with a black lab named liz but she just recently passed away. i would looove to adopt a yorkie, i have always wanted a yorkie :)

6. black or white: i prefer black. you always look good in black.

7. biggest fear: heights! you'll never see me with skydiving listed on my bucket list...

8. everyday attitude: i always try to think positive and be friendly but im not going to say that i've never had a bad day!

9. what is perfection? no one is perfect...that's why pencils have erasers (not my quote but when i heard i thought it was great)

10. guilty pleasure:watching t.v. i could literally just watch tv or movies all day long and not feel bad about it

seven random things about me:

1. even though it's thought to be physically impossible, i can lick my elbow...well not just one-both!
2. both of my shoulders are double jointed...meaning i can move them out of place. gross..i know.
3. i have had glasses since pre-school. BUT since i started so early my eyes are good enough now that i don't have to wear them for anything...meaning i don't have to bother with contacts.
4. i am a very patient person but sometimes i think i have too much patience.
5. i am working on my masters degree and my goal is to be a nutritionist 
6. i love big cities but don't think i would want to live in one.  but i do want to live in a city rather than the country.
7. i haven't really traveled too much yet so i would like to travel before having kids (which will not be for a long time anyway..)

take care was a sick day for me.
i hate taking sick days and missing work.
i mean, i'm most definitely not obsessed with my job...
but i don't like taking a sick day unless its absolutely positively necessary.
i'm a salaried employee so i am still getting paid...but using up one of my sick days.
i know, i know, it sounds a bit nit picky but i just do not like being sick and having to stay in bed.

i just need to take care of my self more often! which means going to bed earlier, eating healthier and vitamins!

my room=my comfort.
I moved in my current house back in the summer.
i still haven't finished decorating my room.
but i have my bed...
 i love my bed. on saturday's when i don't have to be anywhere when i wake up, i'll just lay there after i've woken up because i am so stinkin comfortable. i told's love.
 shalie grabbed this at good will for me. i finally hung it up...FIRST WALL DECORATION!! i wasn't kidding when i said it is taking me a long time to decorate. molasses. 
annnd i will always have a book shelf in my room. i love the one i have because it's definitely used for books, but other things as well. 
so i don't have the most glamorous bedroom
BUT im all about being comfy.

i hope everyone is having a relaxing weekend :)

the past few days...

dear blogging friends,
oh my word. my work schedule is currently pretty inconvenient which messes up my life.
well..that may be a little bold to say it messes up my life but it does mess up my normal schedule.
in others words...sorry for my absence.

so in the past few days i have done quite a few things, including:

  • finishing up the hunger games series. yep i read it. YES, it was awesome. go ahead...judge me for being a 24 year old reading books out of the "teen reading" section.

  • celebrated the new year with some of my closest friends:

  • gone shopping...yea, probably a bad idea but when you are visiting a place that has better shopping than your current gotta do what you gotta do. here is one of the sweaters i bought:

  • i have been catching up on some of my favorite tv shows! parenthood and revenge are back :) 
  • set my new year resolution. this year i will be working on better managing my time. i am awful at time management, such a procrastinator. if i learned anything during my undergrad days, it's that i MUST be more organized and productive with my time each day.
