cheesy deliciousness

just because.
just because i haven't had mac and cheese for...weeks.
how dare i keep myself from eating my favorite food!
tonight...mac and cheese is on my menu!

Stove Top Mac & Cheese:
  • 2 cups large elbow Macaroni, uncooked (about 1/2 lb)
  • 2 cups low fat Milk (about 16 oz) , or more if needed 
    **if more milk is needed, additional 1/4 cup milk at a time for final cooking. **Macaroni pasta varies so much! have additional milk on hand, or be ready to increase the heat if your macaroni doesn’t absorb fast enough. 
  • 1 tablespoon Butter, for flavor ( I tried this recipe once without the butter and I didn’t notice any difference with the recipe. More heart healthy!)
  • 1/2 teaspoon Mustard powder
  • 1 teaspoon Salt, plus additional for final season later
  • generous dash of Nutmeg
  • 1 cup Grated Cheese, any one or combination of  ( jack, cheddar, swiss, mozzarella, gouda, parmesan*, asiago*, pecorino*) *Hard cheeses are best combined with a secondary,  softer, better melting cheese. Cheese varies in flavor and salt level too! 
  • black pepper to taste

1. Place raw elbow macaroni in colander and quickly rinse under water. Let drain.2. In medium sauce pan (about 3.5 qt), add milk, raw elbow macaroni, salt, butter, mustard powder and nutmeg.    
3. On medium heat, slowly bring milk/macaroni mixture to a simmer, stirring the macaroni frequently as it comes up to a simmer. This will separate macaroni and keep them from sticking together. DO NOT LEAVE THE STOVE! The milk mixture will come to a boil very quickly and leaving it unattended will leave a big mess on your stove stop.

4. Once mixture comes to a simmer, immediately turn down heat to LOW. Macaroni will slowly cook in the milk. Having your heat too high will evaporate the milk too quickly!

5. Continue to stir the mixture frequently so that macaroni will cook evenly and absorb milk evenly. If you don’t stir your mixture frequently, you will get a big clump of macaroni in the end! Stir, stir stir!

6. Cook for about 15-20 minutes or until milk has been fully absorbed.
**If macaroni is not cooked fully, add a little more milk or water  to mixture ( in small amounts) until macaroni is fully cooked. This will take about another 5 minutes.

7. When milk has evaporated, stir in grated cheese of your choice. Stir the  cheese evenly into the macaroni.

8. Turn off heat. Place lid on top of pan and cover for about 5 minutes. This rest period will allow macaroni to plump up and absorb any excess milk.

9. Take a final taste and add additional salt to taste. Before serving, stir one final time to mix everything together.

Serve immediately. Feeds about 3-4 people.

branching out

so im not a huge flavored yogurt person.
i like vanilla. i like strawberry.
i just dont like too many flavors going on in the morning.
but i decided to branch out. i bought key lime.

oh. my. word. 
i put some vanilla almond granola on top.
super delish.
shall i just stop at the store after work to get more?

alrighty so i should be working on my homework.

st. patricks day has come and gone
and although i would have loved me some brisket and cabbage
i missed out this year.
but i still had something delicious...yes, this is stuffed salmon.

waah. not an irish meal.
so saturday night we had some friends over
and of course i made irish potatoes...mostly because no one knew what they were!
i can't even believe that.
my dear readers...if you do not know what irish potatoes are-your missing out!
and no...this does not involve real potatoes.

irish potatoes are an awesome sweet treat that i must have every year.
they consist of:
confectioners sugar
creme cheese
and cinnamon for the outside

so today was also the first day of spring.
YAY for spring!

since its almost midnight, i'm thinking it's safe to say we've made it half way through the week.
whew, is it sad that i'm looking forward to the weekend already?
nope. im not ashamed.

i love sweets. but i would choose savory. i mean mac and cheese, a nice steak or burger, mashed potatoes...i mean talk about belly filling. 

2. Would you rather live in the ocean (underwater), in the sky (on a cloud), or in space?probably in space...are we talking jetsons? if we are, then i'm in.

3. Desert, Mountains, Plains, or Tropics?
oooooooooooooooh my gosh. i'm sorry but its a tie between tropics and mountains. i could never give up the beach and i love the mountains. ugh, i need a vacay.

worst pain for 24 hours. i hope no one says chronic pain...i mean in pain for everyday the rest of your life? no thanks.

high school. i created too much drama for myself and i wouldn't have put myself into situations that i am now regret...or i'm embarrassed about.

welp, you guys, my weekend was short for two reasons:
1. we lost an hour of sleep.
2. i had to work on saturday.

but this weekend was good.
even though i lost and hour and had to work.
i got to spend some quality time with friends
AND new friends.

there is an organization at locally that works with invisible children, so i saw this posted by a friend who is involved.
im not super in politics and im stupid when it comes to figuring out non profit.

im not involved in any organization.
im not doing anything to promote awareness about any issue.
this was challenging to me, how can i get involved?
even something that starts little and ends up big...
invisible children has taken almost 10 years with this project.

i realize how important awareness is, and can be.
small steps, what can i do to help?
i am challenged and encouraged by the people who are currently involved.
and because of this, now i am going to start putting myself out there more often.

im a blogger
blogging is a huge way to spread awareness!
